Week of: 10/26

  • Hey, just noticed there was no week of thread.

    I tried this super easy low-fat recipee for the crock pot.

    Chicken Tacos

    4-5 boneless skinless chicken breasts
    1 small jar of salsa
    1 package taco seasoning

    Dump it all into a crock pot and cook on low for 6-8 hours. Remove chicken and shred using two forks. Return to pot and cook on high without the lid until desired level of "dryness" is reached. DH doesn't like soupy filling so we will do it for about an hour next time. Serve with fixins of your choice. If you just use lettuce and tomato as a salad that's hardly any points at all. We did use tortillas but they are only 1pt each. We also used a little cheese in each one. They were yummy.

  • Thanks for starting the thread Karen! I didn't bother to start one because nobody seems to be posting here lately. I know I should've started one anyway...

    Just to update everyone, I went on an interview last Friday at a pharmceutical company about 3 miles away from home. It's a small, quazi start-up. They deal with fertility and women's drugs, and have 3 on the market right now. There's about 35 in the office now, adn they're looking to expand to about 150 by this time next year! The interview went well (and I always say that) ANyway, my recruiter called me Monday and said that they want to see me again to meet the rest of the team. SO I have a second interview this Friday! Yeah!! It would be working with the Sales and Marketing team.

    I'm excited because it couldn't be more convenient! I can go see Peter at lunch if I want, it's just the next town over. Took me less than 10 min. to get there.

    Things are not well on the diet front right now, I think I'm PMS'ing big time. Once I get back to work, I will rejoin WW and get more serious about it. I'm actually maintaining right now...or teetering by a few pounds each week.

  • Well, the interview went great! Hopefully I'll hear something Monday or Tuesday. As much as I've enjoyed being home all summer, it's really time to go back to work. I will miss being home with Peter, but I think I had the best time home with him. I'm guessing if I hear anytime next week, I'll start the following Monday. I would rather start on a Monday, than mid-week.
