I do tomato, red onion and a little bit of cheese. I tried putting some goat cheese in (less calories and fat too) and it was sooo good! This is one of my favourite breakfasts.
-sauteed cabbage and onions - INCREDIBLE BEYOND BELIEF
-sauteed zucchini and onions
-sauteed spinach, mushrooms and onions
-sauteed peppers, mushrooms and onions
I've really been known to put almost any veggie combo in there. I LOVE omlettes. I like to make a bunch of veggies and keep it in a container and have it ready to go for a few days at a time.
My favorite: baby spinach, chopped onions, and mushrooms all sauteed, and a slice of the precooked 40-calorie bacon, crumbled, and some swiss cheese. Yummy.
I also do plain spinach, or whatever leftover veggies I have form dinner the night before. Broccoli is good, so is salsa, or asparagus.
I need a little yolk, so I do one whole egg and two egg whites. (Sometimes just 2 whole eggs and forget about egg whites). The last one I made I took 2 pre-cooked turkey sausage patties, chopped them up and sautee'd them with green peppers and onions. Then when the whole thing was done, I folded it around 1/4 cup grated 4-blend Mexican cheese. Mmmmmm. It was really tasty!
