i dunno what im cookin tonight, but last night i made sweet n sour pork kinda dinner. It had broccoli, onions, red peppers, mushrooms and was served on rice.. it was really good and low fat!

I'll be having a BIG salad and I think I'll make a mini pizza with low cal pita bread, healthy sauce and cheese since I resisted eating greasy delivery pizza yesterday.

I don't know what's on tap tonight, but I can tell you that I had BBQ last night and it was insanely delicious! I've been hemming and hawing over making a lentil soup, though. Super high in protien and fiber, and versatile as far as the veggies/meat you can add (although I usually throw some chicken breast in it)...

well , last night I made chicken breast cooked in a small amount of basil infused olive oil w/ 3 cloves of garlic/sage/basil/chili powder/cumin/orange zest and then cut up oranges with a splash of lemon juice topped off with black beans and steamed broccoli so so so good! and low in fat high in protien. tonight I will be making a Lemon and Asparagus soup , again low in fat and we are having a salad with homemade orange vinegarette dressing.

lol im being lazy for dinner tongiht. Im just gonna make some healthy choice low fat hot dogs.. i know they are horrible for you but im really sore today from my workout yesterday (goes to show how out of shape i am if 35 minutes of exercise makes me hurt! lol) Im gonna spend most of today cleaning too once jay goes down for a nap so i defianlty dont want to make anything too extgravagent for dinner tonight.

I did however make a REALLY GOOD dinner the other night. I get Kraft Food and Family Magazine and theres a recipe for CHeesy Stuffed SHells (about 400c a serving!) ITs make with cottage cheese instead of ricotta, and i just put the cheese and spinach in my foodprocessor to get it all one texture and used manicotti instead of shells (my grocery store didnt have them! lol ) Ill post the recipe. IT was quick and easy and SOOO good! my husband LOVED it!
Heres the recipe:

1 container (16 oz.) BREAKSTONE'S or KNUDSEN Low Fat Cottage Cheese
1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained
1 cup KRAFT 2% Milk Shredded Reduced Fat Mozzarella Cheese, divided
1/4 cup KRAFT 100% Grated Parmesan Cheese
1 tsp. Italian seasoning
20 jumbo pasta shells, cooked, drained
1 jar (26 oz.) spaghetti sauce
1 large tomato, chopped

PREHEAt oven to 400°F. Mix cottage cheese, spinach, 1/2 cup of the mozzarella cheese, Parmesan cheese and Italian seasoning until well blended. Spoon 1 heaping Tbsp. of the cheese mixture evenly into each pasta shell.
COMBINE spaghetti sauce and tomatoes; spoon half of the sauce mixture into 13x9-inch baking dish. Place shells, filled sides up, in baking dish. Spoon remaining sauce mixture over shells. Cover with foil.
BAKE 25 min. or until heated through. Uncover; top with remaining 1/2 cup mozzarella cheese. Bake, uncovered, an additional 2 min. or until cheese is melted.

I've got night class tonight so looks like it'll be something quick and easy... probablychicken and black bean soup I have frozen. It's actually really filling and yummy and good for you! I think it's my last one, though... time to make some more...

Fajitas with chicken, veggies (green peppers, mushrooms, spinich, maybe black beans?) on tortillas with this fajita seasoning packet.
Side of fruit and maybe another veggie I don't know

One of my favorites tonight, stir fry! I sauté up some firm tofu cubes in my wok with a touch of sesame oil, set aside, then sauté the veggies (any combination of whatever is around, asparagus, sweet bell peppers, broccoli, zucchini or yellow squash, sugar snap peas, carrots, garlic, onion, etc.), toss the tofu back in and simmer in some Soy Vay Veri Veri Teriyaki sauce (so good I highly recommend it, available at Trader Joe's! http://www.soyvay.com/estore/display...dID=1034272355) garnish with sesame seeds if you like and serve over some brown rice, voila dinner. A bit high on the sodium so go easy on the sauce, but delicious. I make this at least once a week.

I am being bad tonight. My husband asked me to make one of his favorites, french dip. So between the french bread and 1 whole cup of soy sauce that goes into it I doubt the fact that the roast I used being extra lean even matters. I have been being good all day calorie wise to make up for tonight though.

I found the recipe on line and then I modified it to my liking , I didn't change too much except the soy milk . I don't think I am ready to try that yet. Here is what I did

1 box of organic veggie broth( I will make my own next time due to the sodium)
2 bundles of asparagus (chopped)
2 cloves of garlic (chopped)
1 tsp of sage
1/2 tsp of pepper
2 Tbs of flour
3/4 cup of low fat milk ( you can use soy milk or rice milk , I prefer 2%
finely chopped celery ( I used the hearts and leaves and I only used 1 stalk)
2Tbs lemon juice
lemon zest

in a small bowl add the flour with a small amount of water. in a large sauce pan combine the broth/asparagus/celery/and spices.
let it come to a slow boil the asparagus shouldn't be too soft , unless you like them that way. then add the milk lemon juice and flour mixture bring back to a simmer and then serve. put some lemon zest on top. you can blend this if you prefer. I served it with a salad of a european mix and fresh broccoli with shaved fresh coconut and an orange vinergarette dressing. I hope this helps oh darn I forgot to
