I know after a particularily intense workout I always go up the next day or two.

It's crazy that we do these things to LOSE weight but instead we have to see an immediate gain (although it does drop eventually).
I definitely wouldn't give up on WW! You want a plan that you can stick with for the long haul, not one that gets you to your goal quickly (but then lets you regain quickly too!). It sounds like you're doing well sticking to your points so that's a wonderful sign. Try not to let something and silly as water weight get you down.
