The way I measure my cream cheese to avoid being wasteful and leaving scrapings on the spoon is to look to see how many grams are in a 2 tbsp serving (30g in the brand I use), zero my food scale to the weight of my butterknife, and keep scooping with the knife until I have 15g worth on the knife.
