Default Pink Lentils

Anyone have any recipes for pink lentils as a side dish? They are just like the black ones, just quick cooking. Which is good for me, I'm too impatient to wait for an hour to cook the other ones.

I want to start eating them, but can't find any good recipes!

Hmmm did you watch the biggest loser this week. One of the things chef Rocco cooked was pink lentils. I don't know of any recipe but you might want to post in the food section. I'm going to be watching this tread too.

Sautee a small bag of broccoli slaw (or any other finely cut veggie you enjoy) in olive oil and fresh garlic until tender crip and then mix with cooked pink lentils. (Optional - top with a bit of crumbled feta cheese or grated parmesean) Can be used as a side dish or main course. Quite filling, easy and tasty.

Yeah, I'll post in the food section. I just know that the 20-somethings always have good ideas ..bleh.

Not sure -- are pink lentils the same as red? here's what I do to red lentils:

Chop an onion, sautee for a couple minutes until tender. Add lentils and required amount of water. Bring to a boil, add a tsp of ground turmeric and a tsp of corriander, and s+p to taste. Cook for 20 mins or until lentils are cooked through but not mooshy.

I cook most of my lentil in a similar fashion to suitejudy. But I use either chicken/beef broth instead of water or a package of french onion soup mix. Tomato soup with a couple of splashes of hot sauce is also really good too. Server over brown rice. It's yummy.
