I would suggest coursely chopping cabbage and lightly sauteing it and serving the chicken and salsa over it. I often use cabbage as a rice substitute. I would also cook broccoli and serve it with it. Black beans would also go well with a meal like this. It just depends on what you like.
I'd take broccoli, cauli, zucchini, whatever veggies you like, then mix them with black beans and salsa. Mmmm...
You could also have refried beans on the side, mixed with salsa and topped with a little RF cheese.
I'm with Barb on the cabbage...I don't cook mine, but we often have Taco Bake over Angel Hair coleslaw from the bag. Easy, crunchy, filling, and yummy!
