YUMMY!
I only switched up a few things, I used ricotta instead of cottage cheese (only because it was too early to break out the food processor to get the lumps out), I omitted the lemon peel and used bottled lemon juice (only a dribble), and I used splenda.
So so so so good. I used Schatzi's idea with cream cheese too
Sweetened up some cream cheese with splenda and vanilla for a "frosting" and spread them over the pancakes.. and
TEEEEEERIFFIC!
Great change for a Sunday morning breakfast! And for people like me, almost like having desert for breakfast will get me everytime!
