"Zero" is not a literal term; they are allowed to say zero if the serving size, as they have named it, yields less than one calorie. The more you use, the greater risk you run that the caloric value is no longer nill. In the scenario you described, I don't think we're talking gobs of calories, but you still want to be aware of what you're doing so that you can proceed with full knowledge.
