...is the best. I love meat. I love chicken. I can make a really nice sandwich with good pita bread, hummus, lettuce and baked chicken with cayenne pepper for like 300 calories.

I love to bake chicken in bulk and then use it all week for things. One favorite is melting a piece of swiss cheese over a chicken breast and adding liberal amounts of salsa for a 200 calorie snack.

I love to make Chicken Caesar Salad wraps using a whole wheat tortilla, lots of spinach, 2T light Caesar dressing...and chicken of course. And I throw on some red pepper cause I put it on everything, lol. I used to put loads of cheese on it, but once I stopped, I realized I didn't even really miss the cheese.

Awesome and easy salsa recipie

1 large can of peeled roma tomatos packed in basil, washed and chopped
1 small jar of sliced jalipenos (to taste)
1 small red onion, sliced
Fresh cilantro, diced
1 tsp of lime juice

AMAZNG!!!!

I love chicken!

In fact, I'm going to get up soon and make us a lovely chicken Florentine for lunch. The protein will keep me going most of the afternoon while, I'm at work.

I like making my Chicken Enchilada Casserole, its always a big hit at the house and if made exactly to recipe its like 4 pts a serving. I think the way I make though is somewhere probably around 5.
