Best. Salad. Ever!
 
I threw this together this morning for lunch:
  • 2 c. baby butter lettuce/baby spinach mix
  • a pouch of Bumblebee lemon-garlic chicken breast
  • a 100-calorie pack of Craisins
  • a half a cucumber (peeled and sliced, of course)
  • 2 tbsp. Newman's Own light basalmic viniagrette dressing

Holy CRAP it was good! And filling! (I paired it with a cup of butternut squash soup.) If you're on WW, that entire meal was only 5 points.

That does sound great. I like Craisins a lot and have often thought about throwing them into a salad. I bet Mandarin Oranges would be good in there, too!

Nooooo the best salad EVER is my special Asian chicken salad!

(I make 5 servings at a time for a week's worth of lunches)
* Green/red leaf lettuce
* Edamame (about a handful per salad)
* small can of mandarin oranges (split between the 5 salads)
* small can of sliced water chestnuts (split between the 5 salads)
* Bag of broccoli slaw (split between the 5 salads)
* sprinkle of cashew bits and pieces (measured, definitely under a serving per salad)
* sliced frozen chicken breast from Trader Joe's (I take it separately and nuke it at the last minute, looove hot chicken on salad)
* Spicy asian peanut dressing from Trader Joe's
* A few crispy wontons added at the last minute for crunch

Just kidding, your salad sounds good too. I love cranberries :) Everyone should post their fav salad ideas so we get a thread with great salad recipes!

Glory - I see your chicken and raise you the SAME salad (really, nearly completely the same), except with grilled ginger-soy salmon instead of chicken, and steamed broccoli and sugar snap peas instead of water chestnuts.

Hey Karen,

Here are 2 of my other favorite salads:

Mediterranean Salad (I make four of these at a time because the package of veggie burgers and the dressing have 4 servings)

* Very crisp romaine lettuce
* Roma tomato - diced
* Sliced pepperocini
* Red onion
* A few sliced kalamata olives
* Shredded purple cabbage
* I split a container of Trader Joe's tzatziki into 4 servings for dressing
* Dr. Praeger's tex mex veggie burger (heated and crumbled) on top

BBQ Chicken Salad

* some kind of green, not picky
* red onion
* A little of Trader Joe's roasted corn (I keep it in the freezer and just nuke the amount I want to put on my salad)
* A few black beans (if I have some handy, if not, I skip them)
* Grape tomatoes
* Shredded carrot
* Sliced avocado (if I have the calories for the day, if not, I skip it)
* Trader Joe's Just Chicken slices (I drizzle them with BBQ sauce and then broil them until they get hot)
* A little bit of fat free ranch dressing
* A few crunchy tortilla strips for the top

I eat salad nearly every day for lunch - I take salad very seriously!

Noooo. MY salad is the greatest. Just kidding. Those do sound pretty darn excellent.

Here's one of my favorites -
-
-Lots of mixed greens, baby spinach, romaine hearts
-diced yellow & orange peppers
-sliced red onions
-1 large mango, diced
-1 box strawberries sliced thin
-1 can of mandarin oranges, drained
-handful or 2 of craisins or raisins
-toss in some chopped walnuts or chopped pecans
Dress with balsamic vinegar

Absolutely DELICIOUS. I actually just bought all the ingredients for this to serve on Saturday. Company's coming. I bought a large amount. As much as I make, it is always finished.

I get bored with chicken quite quickly, so I actually marinate the chicken in salsa, and then grill it. You can serve it hot or cold. I usually buy the chicken tenders so I don't have to slice it as much. It's really good with green leaf lettuce (or your choice), green onions, low fat cheese, and other veggies you prefer.

I'll have to try your salads, I'm starting to get bored with mine!:D

I marinate chicken in fat free italian dressing and bake. Makes a nice change of pace for salads.

Totally bookmarking this thread for future reference. I'm awful at making salads. I think i've been making the same one since I was six.

That said! Quick turkish salad:

2 tomatoes, diced
1 whole cucumber, half peeled, diced
3 green onions
1/2 C 2% Fage greek yogurt
1/8 t dill
juice of 1/2 lemon
little salt, little pepper

Mix together, enjoy the most refreshing side dish ever. Alternately, mix the first three ingredients, then mix the last 4 ingredients together and have on the side (kinna a fake tzatziki).

My favourite salads change... but currently I am LOVING

couple handfuls mixed organic baby greens
cucumber slices
sliced baby tomato's
sliced red peppers
sliced mushrooms
cup of imitation crab
1/4 cup unsalted peanuts
2 T sesame Thai dressing (Newman's own)

So good!

Spinach, watercress and rocket leaves (available as a pack from Asda)
Grilled chicken breast
Cherry tomatoes
Cucumber slices
Mustard seeds
Pine nuts
Schwartz Salad Topping
