Default Soup's On

This is a "cream of potato soup" recipe that i just love! I made it a few days ago and it's awesome! There's no butter or flour, and only a bit of milk or cream for a whole pot ~ and lots of veggies if you want to add them.

Onions, celery and carrots chopped in small bits, in non-stick pot until softened a bit

Add tetra pack of low fat/ low sodium chicken stock

Add 4 or 5 red potatoes (more if they’re super small) chopped (skin on)

Lid on and bubble away til spuds are tender

Scoop out some of the potatoes and a bit of broth in a container, zip up with a hand blender, add in ½ cup full-fat milk or light cream (it’s for a whole pot!)

Add that puree back into soup, add some frozen corn or peas or green beans whatever takes your fancy. Add parsley & pepper to taste.

It’s amazingly rich and creamy the next day, after it ‘rests’
My friend calls this one a “I Can’t Cook Soup” but it’s really good! A meal for sure!

Brown 1 lbs. extra lean ground beef (or mix of beef & turkey) with diced onion, carrot, celery ~ Drain any excess fat of course!

Sprinkle ¼ or ½ package of taco seasoning mix over it – depends how spicy you want it

Add tetra pack of low-fat chicken stock or beef stock

Add one big can diced tomatoes

Add 3 cans Cream of Tomato soup (low fat if you can find it)

Add frozen corn & frozen green beans

Heat thru & there you go!
