Wink Yummy Mediterrean style wraps. ( vegan )

Hi gang :

Being from Italian ancestry, my fav type foods tend to be Mediterreans. I love tomatoes, olives, oregano, basil, Greek kalamata olives, pasta, well, you know all that kind of thing.

Wanted to share with you ( but perhaps you may have been doing these for years anyhow ) what I made yesterday that came out really well, had very low points on WW and was super fast, healthy and yummy.

Took whole grain low carb wrap ( made by The Tortialla Factory - 80 calories per wrap ). added some white organic beans, one teaspoon of extra virgin olive oil, some basil and chopped tomatoes. wrapped it up and voila !!
Tasted great and just my kind of thing.

Sounds good. I'm also glad to hear you are experimenting with beans

Oh and I forgot the name of the book that I wanted to recommend, its Nonna's italian kitchen. Its cheap ($10 on amazon) and has a lot of good recipes that are fairly healthy.

Nelie : I am marking down the title right now, will try to obtain from the library.

BTW : fatfreevegan has a gorgeous ethnic section, great stuff from all around the world, so whether your taste run from Mediterrean to African to Asian and beyond, they really had some great things there.

Hi Sunshine :

It really was. Am on a major quest right now for yummy Mediterrean vegan recipes. Turned vegan a few days ago ( major newbie !! ), but am not much of a gourmet cook, so have been looking for easy, quick and healthy vegan fare with a strong emphasis on the kinds of things I love, especially tomatoes, olives, basil ...............

If anybody has something quick and easy in mind like mentioned above, please let me know.

That does sound nummy! I've been on a chickpea kick lately, I like to make a big batch of chickpea salad and keep it in the fridge for snacking, topping a quick green salad, mash it up with some mustard for a sandwich or wrap filling, even scoop some on some leftover rice for lunch, it's really versatile!

Not really a set recipe, depends what I have on hand, but usually includes some combination of the following:

chickpeas
onion
garlic
tomato
peppers
shredded carrot
chopped olives
chopped herbs (parsley, basil, cilantro, whatever you've got around)
olive oil
red wine vinegar
lemon juice
salt
pepper

I love chickpea salad! I marinate a can or two of chickpeas, fresh ginger, garlic, and sliced red onion in red wine vinegar and a bit of olive oil. I eat it on salads, mixed with rice, or even on pizza. YUM.

It all sounds delicious! I'm going to look for the cookbook Nelie recommended I'm also considering buying a new cookbook called the Vegeterranean. It was just published in March in the UK. I'm considering ordering it from amazon.co.uk, or from the reseller on amazon here.

Is the Vegeterranean based on a restaurant? I think I heard there is a restaurant with that name.

I also know there is a vegan mediterranean cookbook (which I can't remember the name) but the one complaint I heard was that the recipes are very oily.
