  • So last night I made some tuna salad for lunch today, and I'm really excited about it. It turned out really yummy. I added 1/2 hard boiled egg, red pepper, onion, dill pickle, celery, mustard, s&p, and enough mayo just to hold it together.

So what do you put in your tuna salad???
  • Whatever the mood strikes me to put in.

My base is always a little bit of low fat mayo. Just enough to help it stick together. From there, I add whatever I'm in the mood for. It could be any of the following (but generally not all at once! ):

    Relish (sweet or pickle)
    Celery
    Boiled egg
Apple (my g'mom used to add chopped green apple and it always takes me back)
    Nuts
    Red and green bell pepper
    Dijon mustard
    Curry powder
    Paprika
Frozen peas (I know, sounds weird, is really yummy)
    Water chestnuts
    Shredded carrot
Baby spinach leaves (chopped fine and mixed in - great way to get in an extra serving of veggies)

    .
  • I use a couple of cans of tuna, mayo, chopped celery and onion, chopped garlic dill pickle, pickle juice for extra flavor, bit of mustard, garlic and onion powder, seasoning salt, pepper.

A few times I chop up a hardboiled egg, and when I have it, I'll chop up green pepper and toss it in. I always make it really chunky and full of veggies. Yum!

(I like to also make cold tuna fish pasta salad... make bowties and toss it with tuna and mayo and chopped celery and onion and celery salt and dash of vinegar... scrumptious, but on SBD one would have to find WW bowties, also scrumptious).

Here in the south (where I live, but am not from), they generally just toss tuna with MIRACLE WHIP (gag) and sweet relish (GAG!). That's so, so wrong.
  • i make it for dh with mayo a bit of old bay some relish and celery.

i do not eat tuna salad....

oh and south beachers... apples are P2... (photochick puts apples in hers)
  • Oh whoops! Sorry about that. I noticed the thread title and didn't see what forum it was in.

    .
  • I think I'm gonna try adding the old bay in my salad next time! thanks ladybug!
  • I'm not on the south beach diet, but I "made up" a tuna salad w/o mayo. Which I didn't think was possible, but is really tasty.

    1 can tuna (drained)
    2 hard boiled egg whites
2 table spoon of relish (I like it sweet)
    1/2 sweet onion
    a dab of olive oil
    and lemon juice to taste.
S&P to taste a little bit of granulated garlic

You can also sub tuna for chicken.
  • 1-6 oz can tuna (I usually double & use 1 can albacore & 1 can light tuna)
1/3 cup cottage cheese (I especially like the whipped "Friendship" brand)
    2 Tablespoons Mayo
1/4 purple onion-finely chopped (any color will do)
    1-2 celery stalks-finely chopped
    1 Tablespoon capers-chopped up a bit
    Juice of 1/2 a lemon
    2 Tablespoons dill relish
2 Tablespoons minced fresh parsley (I usually don't add this)
1 teaspoon of Dijon mustard (I use TJ's garlic mustard & a bit more)

The creaminess in the cottage cheese takes the place of most of the mayo normally added. The original recipe for this came from Simply Recipes website. It recommends using tuna packed in olive oil and not draining it, I have tried it both ways and I actually like it better using tuna in water, drained. It also recommends adding a teaspoon of EVOO if using water packed tuna, I don't do this either. The only other variation I do is my adding the dill relish instead of the recommended pinch or two of dill.

I prefer all albacore tuna, but due to the higher mercury content, I mix it w/the light tuna.
"When buying canned tuna, choose 'light' skipjack tuna over 'white' albacore tuna. Not only does 'light' have three times less mercury, it's less expensive too."

My recipe for tuna salad is the same as this. And I'm grew up in the south, but I can't stand sweet relish and hate when tuna salad (or potato salad) is made with sweet relish. UGH.
  • I like Light TUna
    Kens Light Northern Italian Dressing
and whatever veggies I ahve on Hand Peppers cukes Onions Tomatoes carrots (ph2) celery
I either have it on top of salad or stuffed in celery
oh and if its going to sit for a bit dried minced onion

Old bay is delicious is just about any salad!

Roasted red peppers are good too!
  • I prefer sweet relish in mine but I buy the kind sweetened with Splenda.

UGH indeed!! I hate the potato salad here in North Carolina... it's so gross. My grandma (we are from NY) has always made her potato salad like this: the chopped cooked and peeled potatoes mixed with mayo, bit of mustard, chopped celery, chopped onion, chopped hardboiled egg, celery salt, pepper, mclawry's seasoning salt (with the paprika in it), and good old VINEGAR. And it's so scrumptious, that just talking about it makes me want it! God I wish I could have potato salad. Everytime I've eaten potato salad at someone's house here in NC, they do put in hardboiled egg, but also sweet relish and miracle whip or duke's mayo, which I can't stand. And it's just not right for it to taste all sweet like that, urgh..
  • I think this thread should be stickied into the P1 forum! (for easy reference of course!_)
  • The ingredient I use that I haven't seen listed yet is celery seed.

    Tuna
mayo or lf cottage cheese run through the food processor - just enough to hold it together (Hate it sloppy)
    celery
    onion
    sprinkle of vinegar
    celery seed
    salt/pepper

    Served COLD.

Also - you can make "potato" salad by steaming (microwaving) cauliflower, cut into cubes, and dress as you would potato salad. I normally sprinkle the hot cubed potatoes with vinegar to get the vinegar flavor into the potatoes themselves. This doesn't work with the cauliflower, but everything else works. You can do it with frozen cauliflower, but I think fresh cauliflower works better.
  • this may sound odd, but it's really good.

I use tuna, mayo, eggs, celery, roasted almonds, grapes (cut in half) a little bit of red onion and a sprinkle of creole seasoning, salt and pepper. Different and very refreshing.
