Chicken and Dumplings- 3 points
Makes 8 servings
4 skinless boneless chicken breasts
5 fat free tortillas
2 c. low salt chicken broth
1 c. water
1/2 can evap. skim milk
2 chicken bouillon cubes
1 c. sliced carrots
1 large onion
1 c. sliced celery
Boil chicken and veg in broth and water until chicken is cooked through. Remove chicken and vegs. Cube chicken. Add bouillon cubes to broth and bring to a rolling boil. Tear tortillas into pieces into broth. Cook at rolling boil for 5 minutes.
Add evap. skim milk, chicken, vegetables and salt and pepper to taste. Cover and simmer until thick as you like (15 mins.)
Tortillas puff up to become dumplings.
