Cool Cuke and Sweet Onion Salad
2 Tbsp. Sherry Wine Vinegar (or any vinegar)
1 Tbsp. Prepared Mustard
1 Tbsp. snipped fresh Parsley
1 tsp. Olive Oil
1/2 tsp. crushed Black Pepper
2 Cucumbers, thinly sliced
1 Red Onion, thinly sliced
1 chopped hard-cooked Egg
4 Lettuce Leaves
In a large bowl, mix the vinegar, mustard, parsley, oil, and pepper.
Add the cucumbers, onion, and egg, tossing to combine.
Arrange the lettuce leaves on a large platter. Top with the cucumber salad.
