Here's a quick/easy/low calorie/fat way to enjoy zucchini
4 zucchini's, sliced, 0 pts.
1/2 red onion, sliced or cubed 0 pts.
1/4 cup tomato sauce...any type jar sauce or homemade sauce
(I use meatsauce) 1 pt.
1 tbsp. vegtable oil....or olive oil if you prefer 3 pts.
Place everything in corning ware type dish, mix well, cover with saran wrap
tightly...cook on high 20 minutes.
The entire dish is only 4 pts.
