WAVE 1 or 2 - tableside guacamole

  • I used to go to a great Mexican restuarant that would come to your table with all of the ingredients for great guacamole and make it right in front of you. After a few visits I figured out the measurements. While not a meal in itself, it can spruce up tacos, wraps and sandwiches, add flavor to salads, or you can just dip veggies in it.

    2 ripe avocados (a perfect avocado is key here - should be soft when you squeeze it, but not mushy. If avocados are hard, put them into a paper bag for a day or 2 to ripen)
    1/2 cup chopped cilantro
    1/4 c chopped red onion
    1 lg garlic clove
    1 tomato chopped
    juice of 1 squeezed lime
    2 tsp grated parmesan cheese
    1/2 tsp salt

    Put all ingredients into med sized bowl and mash with large fork to desired consistency.

    Makes about 2 - 3 cups.
  • I think I'd add a bit of ground cumin to that but yes, mmmmm! I love guacamole! Thanks for the reminder! I'll have to make some for when U.S.A. plays on Monday night! (World Cup)

    As for the World Cup - any game party food that isn't a cookie, pizza slice, or beer is a grand idea!! I'll be watching Monday's game too - go team USA!!
