Super Easy Slow-Cooker Chili

  • I'm a lazy cook, so when it comes to eating better, I'm quick becoming the queen of the slow cooker.

    Here's a simple chili recipe I threw together for myself, my folks, and my little sister tonight. 5 servings, at about 460 calories a serving.


    In your slow cooker, stir in:
    1.75lbs of super lean ground beef, cooked and crumbled in a skillet
    can of pinto beans, rinsed
    can of kidney beans, rinsed
    can of corn
    29 oz. can of diced tomatoes
    1 green pepper, chopped
    1 onion, chopped

    Take your empty tomato can, fill it half-full with water, and stir in:
    3 tablespoons chili powder
    1 1/2 teaspoons ground cumin
    1/8 teaspoon ground cayenne pepper
    1/2 teaspoon oregano
    1/2 teaspoon sugar
    ground black pepper to taste
    salt (if you want; I trusted there was enough salt in my can of corn and diced tomatoes to flavor the chili appropriately)

    Stir the contents of the tomato can into your slow-cooker.

    Cook on high for 4-6 hours or low for 8-10. Enjoy!
