Default Looking for a recipe!

I'll post this over at the recipes, too, but I'm going out of my mind here. I had seen somewhere a recipe for a BLT Potato Salad. It was only something like 3 points per serving, and I wanted to test it this week at home and see if it's something worth doing for dh's family reunion (his dad's side) coming up on July 6.

Problem is, I've looked through my Weight Watchers magazines 3 times, a healthy cooking magazine 3 times, and my WW cookbook. I cannot find it, and now I'm wondering if it's something I saw online somewhere. I have to look at the WW site and the site with the points calculator. But I am at a loss and am getting so frustrated!

If anyone knows what I'm talking about and can share it, please do!!

Jenn, this recipe might get you close. If you add some chopped tomato and a few handfuls of chopped spinach, you would be closer.

I found it! It was in a little Best Life recipe magazine I had picked up in the checkout line a ways back. I had calculated all the points out myself, and this one is only 2 pts/serving. I'm going to give it a test-run this week at home and see if it's worth making for the reunion.

Okay, here it is. Mods, if I need to change anything or do it differently, let me know!

I did get the ingredients, plan on trying to make it tomorrow. Looks like part of what makes it low in points is the lettuce and tomatoes added. Fine by me .



BLT Potato Salad
Prep Time: 20 minutes - Start to Finish: 45 mins
6 servings


4 small new red potatoes (about 12 oz), cut into 1/2 inch cubes

1/4 cup reduced-fat mayonnaise or salad dressing

1 teaspoon Dijon mustard

2 teaspoons chopped fresh or 1/2 teaspoon dried dill weed

1/4 teaspoon salt

1/8 teaspoon pepper

1/2 cup halved cherry tomatoes

1-1/2 cups bite-size pieces romaine lettuce

2 slices turkey bacon, cooked, crumbled

1. In 2-quart saucepan, place potatoes. Add enough water to cover. Heat to boiling; reduce heat to low. Cover; cook 10 to 15 minutes or until potatoes are tender. Drain; cool about 10 minutes

2. Meanwhile, in medium bowl, mix mayonnaise, mustard, dill weed, salt and pepper. Stir in potatoes, tomatoes and lettuce until coated. Sprinkle with bacon.

Nutrition info:
1 serving: Calories 100 (calories from fat 45); Total Fat 5 g (Saturated Fat 1 g); Cholesterol 10 mg; Sodium 300 mg; Total Carbohydrate 12 g (Dietary Fiber 2 g); Protein 3 g

% Daily Value: Vitamin A 15%; Vitamin C 20%; Calcium 0%; Iron 6%

Exchanges: 1/2 Starch, 1/2 other Carbohydrate, 1 Fat
Carbohydrate Choices: 1 (I guess this is a Best Life thing)
