Oven Eggplant Parmesan
2 Thin sliced peices of Eggplant Sprinkle with MLS and Dash bake on 350 for 5 minutes.
1 Medium Tomato chopped Sprinkle with MLS dash, and garlic simmer covered for 5 minutes, mash into sauce.
1 6oz chicken cutlet browned in pan with pam sprinkle with spices to taste
1/3 cup Whole Wheat Organic pasta cooked and spiced with MLS and Emeril's Italian essence and 1/2 tsp ff margarine. Spray casserole dish with pam, put eggplant on the bottom sprinkle lightly w ff parmesan, put chicken on top of eggplant, spread tomato sauce on top, sprinkle with FF mozzorela. Pop in oven for ten minutes. Put pasta on plate and pour eggplant parmesan on top and serve....Even my DH and DD had no idea it was diet.
