Overall, that looks like a pretty healthy meal plan. You are off to a great start.
My only thought is that the total calories seem really low for your current weight. I would expect that you could lose weight at a reasonable rate (1-2 lbs per week, possibly even more) at a higher calorie level. While it might be tempting to drop your calories really low in the hopes of losing weight really fast, that isn't always the best approach. You don't want to lose the weight too fast or it will be harder to keep it off (and you don't want to have to eat at this calorie for the rest of your life to maintain your weight). Also, 1200 is the absolute lowest amount of calories you should eat so if you can lose weight at a higher calorie level, that's a better place to start. Then, if you start to plateau, you'll have room to drop your calories. If you start at 1200, there's no room to drop your calories later.
Do you know how many calories you were eating without your meal plan?
Your sodium doesn't look bad to me. Do you have high blood pressure? If not, I think your sodium is fine; I wouldn't worry about it (of course, I'm not a doctor--if your doctor has told you to reduce your sodium you should listen to her/him).
