Default Shrimp Veracruz

Good day! Thank you again for submitting your recipe. Below you will find our LA Chef modifications:

Recipe Name: Shrimp Veracruz

Ingredients:
1 small white onion, finely chopped
1 jalapeno cored, seeded, and minced
1 medium garlic clove, minced
1 1/4 or 1 3/4 lb. shrimp, large, peeled, deveined,tails removed
3 medium tomatoes, cored and diced
1/2 tsp. Morton Lite Salt
1/4 tsp. black pepper
1 Tbsp fresh lime juice
2 tsp. fresh cilantro minced

Preparation:

Coat skillet with cooking spray and sauté onion, jalapeno and garlic medium high heat for 2 minutes.

Add shrimp and sauté 1 minute stirring frequently.

Blend in tomatoes, salt and pepper. Reduce heat to low and simmer 5 minutes.

Stir in lime juice and cilantro and simmer 1-2 more minutes so flavors blend.


Makes: 4 servings

Serving size: 1/4th recipe or about 1 cup

So, is this something that you'd serve taco-style? Or with rice? My family loves shrimp, so we're always on the lookout for good shrimp recipes.

I would think w/rice would be good. Maybe even in romaine lettuce leaves for lettuce wraps? Maybe even as a salad.

Someone had asked me to submit this recipe so I did. Can't remember who it was, though. Sorry I don't have more information. I haven't made this one.

I made this last night and it is superb.. I added some extra jalapeno and served on top of wild rice.. YUMMY!

This sounds fantastic! I would perhaps substitute the jalepeno for NM Green Chile, but either way it sounds like a real winner!!
