Does anyone know if there is some kind of cheat sheet or even website that would show how much of a vegetable equals 1 cup? I feel like the only way for me to measure is to cut up my veggies and sometimes, I don't want them cut up like that!
For instance, I made an 8 oz. bag of frozen asparagus last night. In my mind: 8 oz = 1 cup, but seeing all that asparagus seemed WAY bigger than 1 cup's worth to me.
This morning I ran out the door and just grabbed random vegetables. A whole cucumber, and 4 dill pickle spears. And now I have no idea how much that equals because I never measured it
Usually 1/2 of a cuke for me is a cup! I usually put it in the cup to be sure but it always comes close to 1 cup. Our cukes could be different sizes though, so I don't want to tell you that's your safest route. If that makes you comfortable, try it!
I think you being aware of all of the measuring and all of your questions is a great route to be on! Don't be nervous. Seriously, after a week or 2, everything will start to seem normal!
As for asparagus, I see it as double height of my measuring cup so I only fill the cup half way. Make sense? I would love to find a website that had the weight measurements too....
For asparagus, I measured it once cut up into little pieces and made note of how many spears went into that 1C measurement. Now I can just count up the number of spears to cook as I already have a rough idea of what makes up a cup. You could do the same with cucumbers, celery, etc. that are roughly the same size as that original measured amount: measure once and then go from there.

I opted to start weighing my veggies pretty quickly on this diet. I found that if I was measuring by the cup I would try to cram them into it instead of packing them more loosely. Yep, I was pretty hungry in those days. Ha.
I have weighed my chopped veggies several times with the same intentions...I've found that 2 cups of chopped cucumber on average came out to 12oz, and if I remember correctly, 2 cups of chopped celery came out to around 11oz.
My center gave me a list with weights and measures, but I didn't like that it only had 1cup measurements. I changed it around and made it work for me. It's got 1 cup, 3/4 cup, 1/2 cup, and 1/4 cup (so if you mix up your veggies like I do). They are in both grams and oz measurements.
