I really like the angel hair noodle in a stir fry and I would highly recommend them!!!

I found them today, at Whole Foods Market in Lynnwood, WA. They were in the refrigerated section (got some exercise circling the store a couple times looking). I got the rice and the angel hair variety - will try them out sometime soon.

Easy...just take raw zucchini and i use a vegetable peeler, and 'peel' from each side down to the seeds. These peels resemble noodles and of course count towards your veggies, and taste great. Saute or add to stir fry.

I got a spiral slicer that I have been using to make zucchini noodles with. Cost about $20 and has a fettuccine/angel hair setting. Have made stir fry, added then to the soups and made a dish with the "noodles", shrimp, olive oil, garlic and some spices! All turned out well, helped fill me up and got my veggies in

Smile Crazy for Noodels! Pad Thai with zuccini noodles- yummmmmm

Speaking of noodles!. My husband who is a personal trainer (so is working my tush off!) eats a lot of Paleo foods. One of my favorite recipes is Paleo Pad Thai. If you Google it there will be tons of recipes that you have to tweak but it is sooooooo amazing! You basically grate a zuc, stir fry, and spice and sauce up. Chicken or shrimp are great additions.
Now of course on Paleo they don't do soy- so my husband uses Coconut Amino Acids (tastes the same) from the Health Food Store. In IP soy is allowed-- but if you have a WI you might seek out the sodium free Kikomani!
Spaghetti squash is also a major yum!


I'm finishing grad school this month and trying to lose my "Grad school 25" so I can keep up with my hubby! I started on July 1 and am down 6 lbs so far!

Google Paleo Pad Thai. You will have to tweak the recipe but the method is the same. They ROCK!

Seedless cucumbers make excellent noodles too. I use my fine julienne slicer on my mandoline, I've done the zucchini as well, i sometimes mix them in with the miracle noodles fettuccine.

for $9.99 at a local kitchen store....it is awesome!

Liz: Thats the first thing I did when we got home...haha! Had a cuke with WF italian dressing...YUM! It came out so "fine" was very much like thin spaghetti as to size...can't wait for tonight to use it in zucchini!

I LOVE this new tool!
I am still searching locally for 1 pack of miracle noodles to try. Don't want to pay shipping just to try a pack. Still have like 5-6 more places it could be so maybe later today after my work is done.

This helped find a store where I could buy them. You don't have to fill out the top part, just the little blue "click here" button in the upper middle section will lead you (hopefully) to them. http://www.miraclenoodle.com/t-store_locations.aspx I had to put the zip code of a city near mine to get it working.

I tried the miracle rice today in the hot chicken soup. I think it needs to be more in a stir fry perhaps and not swimming in soup. I thought they were fine eating a few just on their own. I saved some for playing with other combinations - maybe I'll try making sort of bubble tea with the lemon protein drink and miracle rice, or just putting it in a veggie stir fry.
