3 egg whites, add dash of Tabasco, and course ground pepper.
Spray skillet with 1/3 second spray of olive oil.

Blend eggs and pour in skillet.

Add 3 tablespoons of Vegetarian Chili when eggs are about 1/2 cooked. Put in your 1/4 cup of low fat sharp cheddar. Fold egg over to make omelet. Cook until cheese and chili are hot.

Remove and put on plate. Add your Pico de Gallo over the top.

Toast 2 slices of Nature's Own Light Wheat, spray with 5 squirts of I can't believe it's not butter spray and have the Maalox ready.

This is so good - I can't believe how much I liked it and how filling it was.

The nutritional information includes all the ingredients as well as your two slices of toast. Enjoy.

Charles-Houston, TX,
I am impressed with your weight loss. I am aware of -sensitive to all positive and inspiring stories; to prop my sagging enthusiasm. I have hit a bad plateau and have gained back 3 lbs, and am afraid it will continue.

I would try your omlet--without the tabasco. I like it but it does not like me.
It sounds filling with the chili and cheese and toast. I have been eating my toast dry, and never thought of using the spray-what a great idea. I thank you for the helpful hint, and the recipe and mostly for the inspiration.

I hardly need to wish you well as you are doing such a great job yourself, but know good thoughts are winging your way anyhow.

every single bite ....tattles on me

I use that stuff all the time. On my toast, my vegetables, my english muffins, baked potatoes, etc.
