Default Crustless quiche

I am looking for a tried and true crustless quiche recipe for a ladies get together. I am looking to use ham, cheese (?) not sure which one, maybe some shredded zucchini, carrot, mushroom, red bell pepper. Does something like this hold over well? Meaning I would need to make it tomorrow for get together on Thursday evening. Are they OK served room temperature? I'm not used to making foods for this type of thing. I cook at home to be eaten immediately, not held over for the next day, etc. HELP! I appreciate any advice. I am seriously thinking about just buying something already prepared. TIA

This is the crustless quiche recipe I make, but it is mainly designed to be like pizza. You can put all the veggie toppings you want, but not sure if it is exactly what you are looking for. It last fine, I usually eat it for a week (storing in fridge) when I make a batch. I prefer it cold, but I think that is just a preference for me.
