Default Chicken Pot pie - found a way to make it work!

So one of my family's favorite meals is homemade chicken pot pie (whole foods, organic, free range chicken & homemade broth). After putting all the ingredients into the loseit app I was appalled at the amount of calories. A closer look told me almost all of the calories were from the crust. So here what I did. I took a 6oz ramekin and put some filling into it. Then I made the pies as usual for the family. I took a small amount of the scraps of the crust that I trimmed off of the pies and rolled it out very thin, but large enough to cover the filling in the ramekin. I then just tossed it into the oven with the pies. It cooked up perfectly, was just as tasty as it had always been for just a fraction of the calories! I was so pleased with the results, my husband and kids even ooo'd and aahhh'd at how cute it was.

This is a great solution, and I also make a homemade chicken pot pie, that the crust is way too many calories. The man in my life likes a top and bottom crust, the executive chef that he is, he likes it when I cook. I also have made the filling, with a lot of chicken and veggies, carrots, celery and peas and then thinned it out to make chicken pot pie soup.

The soup idea sounds great as well, I will have to try that!
