Default Home-made baba ganoush (easy)

Hi all,

I thought I'd post my home-made baba ganoush recipe, because it's super-easy and -- if I may say so -- delicious. I tried to emulate the stuff from a famous farmer's market in my city (Toronto) and was unexpectedly successful on my first try. So here it is:

1 large eggplant, cubed and baked until soft (with peels left on)
4 tbsp reduced-fat mayonnaise
juice of one lemon
4 cloves of garlic, microwaved for 25 seconds
salt and tabasco sauce to taste

Put the whole works in a blender and puree until semi-smooth. (It should be a little lumpy.)

The whole thing comes out to about 400 calories, so I often have a third of it with a large heated pita bread for lunch. Very satisfying.
