I have been messing around with brown rice lately, trying to figure out a good way to eat it. Its low enough calorie (the kind I get) and is really filling, which is one of the things I look for in my foods.
Well, tonight I think I perfected a meal. I made rice, shredded chicken breasts, and put mushrooms in it, mixed in taco seasoning, topped with fat free shredded mexican cheese and diced tomatoes from my dad's garden. Oh my yum! I can't tell the difference between the rice and ground beef, which is awesome. I made myself a nice little taco salad! Totals about 340 calories for 2 cups worth of food. *is a little happier in her life now*
