Roasting veggies is my favorite way to eat them. I use all the ones mentioned above. Expect for parsnips and I'm so going to buy me some of those!
I either chopped them in big bite size pieces and serve as a side dish alone or I chop them into little pieces and use them to top homemade pita pizza's or whole wheat rice. I like to roast at a high temp so I get the carmalization as well.
A great thing to do is to roast up a ton of veggies and keep them in a bowl in the fridge and just microwave for a very low calorie and healthy snack.
