Spreading herb butter underneath and over the skin of the chicken breast is the secret for extra moistness and flavor
1/4 cup butter (room temperature)
1 tbls choppedparsley
3/4 tsp salt
1/4 tsp dried sage
1/4 tsp garlic powder
1/4 ground pepper
4bone in chickenbreast halves,about 3 lbs
Preaheat oven to 425.
Combine butter, parsley,salt,sage,garlic powder and pepper,reserve 2 tsp.
With fingers carefully seperate skin from meat of chicken breasts leaving skin attatched. Spread remaining herb butter over meat under skin of the breasts, and smooth the skin over the butter.
Rub reserved herb butter over the top, then place them
in a roasting pan and bake till chicken is no longer pink and the juices run clear its around 35-40 minutes.
