2 TBS Olive Oil
16 Oz Chicken Breasts (sliced)
3 TBS Lite Soy Sauce
1 Red Bell Pepper
1 Medium Onion
1. Cook chicken in olive oil completely. You may have to add a bit of water to get the job totally done. Chop up the pepper and onions while that's cooking.
2. Add 2 Tbs of the Soy Sauce and continue to cook chicken for 5 minutes or so.
3. Remove chicken from the pan and set aside. Add your Pepper, Onion, and the remaining soy sauce and saute. Cook until the onions are carmelized.
4. Stir in chicken and viola!
This is a dinner of my own creation, and one that was created on the first night I've ever cooked with a red pepper. DF has proclaimed this meal his all time SBD favorite, and he doesn't even do SB!
You can add green peppers and mushrooms if you like. This will only add to the flavor and nutrition of the meal!
For Phase 2: Serve over brown rice.
