1 1/2 cup extra-virgin olive oil
1 tsp salt
1 Tbsp freshly ground black pepper
1 Tbsp hot red pepper flakes or to taste
1 Tbsp chopped fresh rosemary leaves
1 Tbsp finely chopped flat-leaf parsley
1 Tbsp fresh thyme or 1 tsp dried, crumbled
6-7 lbs chicken cut into pieces
juice of 1 lemon
Mix the marinade and pour over chicken. Marinate for at least one hour or overnight.
I put this in a zip lock with boneless skinless chicken and freeze it. It marinates while the chicken defrosts in the fridge. ITs ready for the grill or broiler.
I've even left out the lemon and done it. Still tastes good.
