Thumbs up Garlic Basil Shrimp with "mashed potatoes" and spinach

Before I forget the recipe [and I cook for one so I don't really keep tabs on "how much" of everything so measurements are NOT exact], here's the recipe for one of the tastiest things I've made!

1/2 red bell pepper, diced
1/4 of a large red onion, diced
1 tablespoon oil oil
1 tablespoon of Smart Balance
12 shrimp, peeled [devained]
2 cloves of garlic
cayenne [to your taste]
5 leaves of fresh basil

steamed spinach
cauliflower mashed potatoes

Use the oil and sautee over low heat the onion and pepper. When soft, add the garlic. When the garlic is light brown, add butter and when melted, the shrimp. Once the shrimp is pink on one side, add the basil and turn the shrimp. Add the cayenne pepper and cook until shrimp is done.

I use a slotted spoon [to drain excess oils] and spoon the shimp over a pile of cauliflower potatoes and spinach. ENJOY!

Thanks so much. Came on here looking for a shrimp recipe. Annnnd I happen to have some basil ready to trim in the garden. Thai Basil.....mmmm.
Will be doing the cauliflower and spinach too.

Looks good, Jen! ...the picture kind of looks like a 70's Weight Watchers recipe card! I have a bunch of shrimp in the freezer and guests coming on both Thursday and Friday. I'll be making this one of the nights.

I made this for dinner tonight. It was really tasty. I topped it with some crushed red pepper flakes after it was plated. My 3 and 5 year old boys loved it too!

LOL yummy! I totally forgot about this recipe. Wow, it was from my single days too! And it was my first "digital" camera - stinky quality.

This was DELICIOUS!! Even with the green spinach my children liked it =) I did add some chicken broth and cream cheese to it to make the liquids more like a sauce. Thanks a bunch for sharing!!
