Meat Loaf Muffins
Yes, I know. It's a greatly maligned dish. But, I managed to make a very tasty loaf that is low in fat with virtually no carbs. Looking at the ingredients, it seems to be within the guidelines of Phase 1. If it isn't please let me know.
By the way, I rarely measure ingredients. Everything that does not have an amount, is to taste.
Oven: 375 f
spray 6 piece muffin tin with cooking spray.
1 lb very lean ground Angus 97/3 (you could also use ground turkey)
1 egg
pepper
garlic salt
onion salt
parsley (I put parsley in just about everything, no idea why)
fat free cheddar cheese (abt. 2 tbsp)
chopped green and red peppers. (about 1/4 c.)
In a mid-sized bowl, mix all ingredients together well.
Form the mixture into balls that will fit into the muffin pan so that the mixture is slightly over the edge. You should get 4 meat loaf muffins out of 1 lb of meat.
Cook for approximately 50 minutes, or until the meat measure 160 degrees. Remove from oven, let stand for 5 - 10 minutes.
