Another take on the ricotta Mousse.....
1/2 c. Strawberry "Jam" - find the recipe in the Misc. phase 1 section of the recipes
1/2 container of Part Skim ricotta
1/2 container of FF cool whip
1/4 c. FF half & half
Sweetener as needed
Combine "Jam", ricotta, and half & half together. Gently fold in the cool whip. Sweeten, if needed. Pour into 4 containers. Let set in the refrigerator for at least 1 hour.
