Ok ladies -- here are a few of my favorite "tried and true" crockpot recipes (and they are VERY easy too!!):

Crockpot Sour Cream Salsa Chicken

Amount Measure Ingredient -- Preparation Method

4 skinless boneless chicken breast halves
1 package reduced-sodium taco seasoning mix
1 cup salsa
2 tablespoons cornstarch
1/4 cup light sour cream

Spray the crockpot with cooking spray. Add the chicken breasts. Sprinkle with Taco Seasoning. Top with salsa.

Cook on low for 6-8 hours.

When ready to serve, remove the chicken from the pot. Place about 2 T cornstach in a small amount of water. Stir well. Stir the cornstarch mixture into salsa sauce. Stir in 1/4 cup of sour cream.

Easy Crockpot Chicken Recipe

Amount Measure Ingredient -- Preparation Method

4 boned and skinned chicken breast halves
1 envelope Lipton onion soup mix
16 ounces fat-free sour cream
1 can 98% fat free cream of mushroom soup
(I used 1 can of 98% fat free cream of chicken soup)

Place 4 chicken breasts into the bottom of the crockpot along with onion soup mix, sour cream and cream of mushroom soup.

Cook on low for 8 hours. Makes 4 servings.

Crockpot Pot Roast

1-2 cup(s) celery (chopped)
1-2 cup(s) carrots (chopped)
2-3 cups potatoes (in chunks)
2-3lb pot roast
1 package onion soup mix
gravy (if desired)

Put the celery, carrots and potatoes on bottom of crockpot.

Add the pot roast (on top of veggies)

Sprinkle onion soup mix onto roast

Pour desired amount of gravy on top of roast

Set crockpot on low for 8 hours and its done!

My notes: This recipe is so good!! I took 2 recipes and combined them to make it the way I like it. I took out some stuff - added stuff, etc.

I am not doing specific points for this - it really just depends on how much you eat -- and then you should look up the roast points in your WW book and count that. The rest are just veggies - so they are free! Oh and the potatoes can be counted by how much you eat too. Its all in how much you want - if that makes sense!



BBQ Pork Chops - Crockpot

4-5 boneless pork chops
1 jar BBQ sauce - any kind you like

Spray the crockpot with cooking spray. Place the chops inside and pour the bottle of BBQ sauce on it.

Cook on low for 8 hours.

As far as points goes it depends on the size of the chops.....you can figure it out when you make it.

My notes: Very good! I love this recipe !!


Southwest Meat Loaf (Crock Pot)

This comes from the Weight Watcher 15-Minute Cookbook. It was very good! A real husband pleaser!!

Southwest Meat Loaf
(8 servings/4 points)

Vegetable cooking spray
2lbs ground round (I used 93% lean ground beef)
3 slices light bread, curmbled (1 cup)
1 cup chopped onion (about 1 medium)
1/2 cup fat-free egg substitute
1/4 teaspoon salt
1/4 teaspoon ground pepper
1/2 cup ketchup
1/2 cup thick and chunky salsa (I used chili sauce)

1.Coat 3 1/2-quart slow cooker with cooking spray. Tear off two lengths of aluminum foil long enough to fit in bottom of cooker and extend 3 inches over each side of cooker. Fold each foil strip lengthwise to form 2-inch-wide strips. Arrange foil strips in a cross fashion in cooker, pressing strip in bottom of cooker and extending ends over sides of cooker.

2.Combine beef and next 5 ingredients; shape mixture into a loaf the shape of the slow cooker container. Place loaf in slow cooker over foil strips. (Foil strips become "handles" to remove meat loaf from slow cooker.)Make a shallow indention on top of meat loaf. Combine ketchup and salsa (chili sauce); pour over meat loaf.

3.Cover and cook on low heat 8 hours or on high heat 3 1/2 to 4 hours. Use foil strips to lift meat loaf from cooker. Let meat loaf stand 10 minutes before serving.Yield: 8 servings/4 points.

209 calories;9.8g carbohydrate;6.0g fat (2.1g
saturated);1.1g fiber;27.9g protein; 66mg cholesterol; 415 mg sodium; 31mg calcium;3.1mg iron.

My Notes: This recipe is very good. I don't like onions so I left them out. I did add alittle onion powder - but my BF and mom said it needed something to give it some zing (I thought it was fine to be honest). Next time I am going to add a packet of onion soup mix and see how that goes. But its good - definately try it!! Oh and I used chile sauce too - mild

BBQ Chicken in the Crockpot

Beef soup:

1# of round steak cut into small pieces
3 beef bouillon cubes
2 cups water
3 pcs celery, 3 carrots, 2 med potatotes cut up
1 med onion
can diced tomatoes
2 cups mixed frozen veggies
Mix everything (except frozen veggies) together & cook on low for about 5 hours. Then add frozen veggies & cook another 2 hours.
This was very good. Not sure about the exact points but I counted it as 3 for a bowl.
