I ate oatmeal every day in winter (and a lot of the summer too) for years and years. It's been hard to give it up, but the carb load is just too high for serious carb reduction diets, at least in the weight-loss stage.
I too cant face the smell of eggs every morning. Like you I eat ham, cheese etc sometimes, and I do make fried or scrambled eggs a few times a week. One thing that really worked for me was making crustless quiche (similar to recipe posted by Kim above, although I do lots of different ones based on my mood & my fridge). I found that having that already made so I just need to microwave a slice of it was a really good solution for me. It keeps for about 3 days in the fridge & if there is any left after that I freeze it in slices & it needs a little longer in the microwave. It turns into a good snack too, and my husband (who is French) likes quiche for dinner with a salad & is really happy with the crustless versions which is all I make. I know it's mainly eggs, but it somehow doesnt smell so eggy so I don't have the same problem with it, and it's become a grab-and-go breakfast for me.
