Default P1 - Oatmeal Cookies

Almost forgot to share this recipe...I made a batch and have been having them with a big glass of milk for breakfast:
Oatmeal cookies:

1 cup uncooked (old fashioned) oatmeal
1/4tsp salt
1 ripe mashed banana..the riper the better
1 egg white (or 1/4 cup egg sub)
2 packets of Splenda
1 Tblsp of cinnamon
1/4 tsp vanilla extract
1/8 tsp almond flavoring

Mix the ingredients together and spoon by teaspoon into cookie sheet (I spray with Pam) cook 10 -15 minutes in 350 degree preheated oven.

When I made this recipe last night, it made 12 cookies. When they bake, they don't spread out at all, so you may want to squish them a bit on the cookie sheet so the middle cooks. Just a suggestion! The are DELICIOUS!

Default Pumpkin Cookies

I just made this recipe with about 1/2 cup of 100% pumpkin (out of a can.. make sure its not 'pie filling') instead of the banana. Even better! I used a bit of Splenda brown sugar instead of the regular Splenda. YUM. BTW.. Splenda brown sugar is the bomb! I put it on baked sweet potatoes for dinner and a spray of no calorie "I can't believe its not butter". YUM.

I found some frozen waffles made out of brown rice and soy! They are dee-lish-ous. Brand name is Van's wheat free waffles.

We can't have brown sugar in Phase 1 though - even splenda, right?

jenne, technically we're not supposed to be having ANY sweetner on Phase 1. However, it has been mentioned in another post that if you don't want the full "detox" you can add minimal amounts of sweetner. Considering it's only 4 tsp for the entire batch I don't think it would hurt too much. However, you could leave out the splenda (esp if your banana is super ripe) and see if you like the results. Hope this helps!
