Default Good veggie side dishes for Thanksgiving?

I am in search of healthy veggie recipe so that I can bring a side dish to my parent's for Thanksgiving. My mom makes several vegetarian side dishes and they're wonderful, but not overly healthy. (Mashed potatoes with lots of butter and cream, green bean casserole with lots of Swiss cheese and sour cream, those little onions smothered in a cheese sauce, stuffing...). I'm thinking of roasting bunch of vegetables with a balsamic vinegar glaze, but would welcome any other ideas. Thanks!

I posted an eggplant hotdish over in the veggie casserole thread. You could eat it as an entree, or just have a scoop on the side.

Also, try cooking couscous with olive oil and fresh vegetables.
