Default So, what's for dinner tonight?

I had a mexican dish from ph 1 recipe board last night. It was great!!!!
Tonight is chicken of some sort...haven't exactly decided yet. Anyone have a chili-lime chicken recipe?!?!?

What's everyone else making?

I am really in the mood to cook tonight but I will be going out to eat with my mom instead. I will probably have grilled chicken and a salad

some grilled chicken (or baked if I get lazy this afternoon )
brussle sprouts
and broccoli salad
and lots of water

Maybe sf jello or pudding for dessert

I'm boring tonite. It's gym night, so I usually eat a little something right before I go and then a little something when I get back. I'm thinking a Morningstar Veggie Patty for before with some lettuce, tomato and mustard and when I get back I will probably have a ham and swiss on wheat (grilled)...I already had a pudding today and I wish it would have lasted forever, but it didnt, so no dessert for me tonight.

We are having leftover Taco Bake (from the Phase I dinner board) in whole wheat tortillas. But let's not talk about it, I'm starving!!!! Hehe. No, I love to read what other people eat.

Hubby made me swear that we wouldn't eat "just chicken" anymore! LOL
So, this week it's gonna be two "beef" nights, two chicken nights and one fish night (he LOVES fish). Other than that, it'll probably be leftovers and sandwiches for them.

I haven't been eating dessert....what's good? I miss that peanut butter cup thing. That was pretty yummy. SF pudding with SF cool-whip maybe? I have trouble stopping once I start

Dammit! I don't have any more taco bake in the freezer! I will probably have spaghetti squash with meatballs and tomato sauce. Sigh!

Going Have An Octofest dinner tonight. Bratwursts with kraut,Brussel sprouts and spetzel.No beer today,Hubby gave it up being on a low carb diet. Hugs BB

There's a Chicken Lime recipe on the board.... Haven't tried it yet - If you make it, let me know how it is... I'm trying the Herb Crusted Flank Steak recipe

Chicken with Lime Dressing
This Tex-Mex chicken is sure to be a favorite. It will turn your home into a hacienda for the evening.

Yields: 4 main-dish servings
Prep Time: 25 minutes
Cook Time: About 20 minutes

Lime Dressing:
1/3 cup fresh lime juice
1/4 cup chopped fresh cilantro leaves
1 tablespoon chopped green onion
1 tablespoon extra virgin olive oil
1 teaspoon sugar substitute*
1/2 teaspoon salt

Chicken:
4 skinless, boneless chicken-breast halves, pounded to 1/2-inch thickness
2 medium avocados, peeled
1 tablespoon fresh lemon juice
2 teaspoons picante sauce
1 teaspoon plus 1 tablespoon extra virgin olive oil
1 medium red pepper, finely chopped
1 garlic clove, minced
1/4 cup sliced almonds, toasted
2 tablespoons whole wheat flour


1. Prepare lime dressing: In small bowl, combine lime juice, cilantro, green onion, oil, sugar substitute, and salt.

2. Prepare chicken: In glass baking dish, combine chicken with 3 tablespoons lime dressing. Let stand at room temperature 10 minutes.

3. Meanwhile, in medium bowl, with fork, mash avocados with 2 tablespoons lime dressing. Stir in lemon juice and picante sauce.

4. In nonstick 12-inch skillet, heat 1 teaspoon oil over medium-high heat. Add red pepper and cook 6 minutes or until tender and lightly browned, stirring occasionally. Add garlic and cook 30 seconds. Transfer pepper mixture to small bowl; stir in almonds.

5. Remove chicken from dressing; discard dressing. Pat chicken dry with paper towels. Transfer chicken to waxed paper; sprinkle both sides of chicken with flour.

6. In same skillet, heat remaining 1 tablespoon oil over medium-high heat. Add chicken and cook 10 to 12 minutes or until juices run clear when thickest part of chicken is pierced with tip of knife, turning over once.

7. Place 1 chicken breast half on each of 4 dinner plates; top with red-pepper mixture and drizzle with remaining lime dressing. Serve with mashed avocados.

I ended up making the garlic lime chicken tonight. It was great!!!!! Hubby said it didn't even seem like South Beach
My daughter even liked it (she's very picky). I cut up the leftovers and I'm going to have that on my salad tomorrow.
If you haven't tried it, it's worth it...
