Ithought I had just posted this question but I don't see it - sorry if it pops up twice for some reason.
Yesterday I had squash that is neither summer squash or spaghetti squash. I think it's "winter squash". It is dark green with thick skin and ridges on the outside, about the size of a giant grapefruit, the inside is hollow with pumpkin-like seeds.
I cooked it in the microwave and it was SOOOO good. Very sweet and yam-like. Is this squash okay for Phase 1????
Sorry but winter squash are not OK until Phase II and then are to be counted as carbs. What you had was probably an "Acorn Squash". It has another name which I can't remember. It's my very favourite squash - especially with butter and brown sugar!
Yes Ruth, that was it! Grrrrrr I KNEW it was too good. Nevertheless, it wasn't ice cream, it was an honest error so I'm not beating myself up about it. I've still dropped 3 lbs this week!

Don't worry, I mistakenly ate butternut squash on my first P1. Great....now I want some squash ! I make this delicious white bean and butternut squash stew...so yummy for P2.
