Let's share our supper ideas...
Here's what cooking here, it's Friday so I am making baked cod (yes with butter) and a big salad! About 7 points! And if I have any points left, I'll have a lite beer for 2 points! :cool:

I'm planning on having a Smart Ones Rice and Beans, and a salad. However, I think my mom wants me to go out to eat with the family tonight, so I don't know what to do. ( I only have 7 pts to use for dinner).

Sammykins...did you stay within your points? It's hard to go out to eat with limited points-that what the flex ones are for though. I knew I was having filet minon last night and was soo looking forward to a great steak...so I made the cabbage soup for lunch and nibbled on that all during the day and really enjoyed the steak and salad bar for supper. Tonight is weigh in and I will be eating the left over soup for lunch, too. I need to lose only .4 to make LIFETIME. But after weighing in tonight I am going home to pocupine meatballs! :smug:

I had white chili (2 points per filling cup), yogurt biscuits(1pt each- I had 3) and baked onion rings (1 pt per serving and the serving is nicely sized). All three recipes are from WW. I also had cucumber slices and baby carrots. I also had a table spoon of Brummel and Brown spread (it is a margarine like product and = 1pt/tbl).

White chili:
3 can Rotel Tomatoes
1 lb chix breast (cooked and chopped up)
3 cans of any white beans.

1 cup = 2pts.

Tonight I am making Chicken Quesidillas, corn tortillas, low fat cheese, low fat cream of chicken soup, chicken breasts, chili powder, and green chilis. I cook them on the George Foreman grill. I will serve them with FF refried beans, salsa and LF sour cream! YUM!

I didn't make LIFETIME last night...I actually gained a pound. I was OP all week, but I think it was the cup of chili I had 2 hours before weigh in- it was very salty! Oh well, there's always next week, only now I need to lose 1.4#! :^:

Rotel is a brand of stewed tomatoes with green chilis in with them.

lala-what is mahi mahi-fish? I live in Wisconsin-we are limited in our seafood selections.

Thanks for clearing up the tomatoe thing, Ideal. I've had mahi-mahi before & really enjoyed it. Last night I had some sloppy-joe mixture on ww toast and a small piece of veal. Don't know about tonight yet - bf is cooking supper tonight.

Tonight I have a pork tenderloin in the crockpot with 98% FF cream of mushroom soup over it-not sure of the points, but it is very lean. I will probably have it with brown rice and carrots. It is very cold here (-40 degrees) so having supper ready when I get home will be a great treat!

Bandit-that sounds good! I forgot to take meat out of the freezer, so I think I'll have a tuna casserole-not too exciting but comforting-No Yolk Noodles, 98% FF cream soup, tuna, lite cheese, and peas!

I had a huge salad with 5 slices of reduced fat salami (2 points), 2 oz lite ham (2 pts) 1/4 cup lite feta cheese (2 pts) and cheese ritz crackers (2 points).
My kids call this meat and cheese salad. I call it a quick and easy meal. My kids do not like most salad veggies, but they will eat lettuce, carrot, celery and cucumber. I love mushrooms, sprouts, snow peas, red cabbage and broccoli on my salad.

Cheesy Nachos (7 points total):

12 items baked low-fat tortilla chips - 2pts
1/4 cup scallion(s) chopped - 0pts (I didnt have any, so I just used reg. mushrooms)
1/4 cup salsa - 0pts
1/2 cup canned kidney beans rinsed and drained - 1pts
2 oz low-fat cheddar or colby cheese - 2pts
1/4 cup guacamole - 2

I was a little unsure about this because if you have ever made 'nachos' with fat free cheese you know that sometimes that cheese can turn as hard as a brick, but putting the salsa on first seems to keep the cheese soft. Also the kidney beans were really good (I wasn't sure how they would taste).
Overall the meal was really good and surprisingly satisfying. It sounded like it was going to be a small portion, but once you added everything it's really a very large portion. :)

Tonight is Glazed Pork Chops=5 points

Brown pork chops, in a bowl combine 1/3 cup vinegar with 3 Tbsp. soy sauce and 1 tsp. garlic. Cover and simmer for about 10 min. In a bowl, combine 1 1/2 tsp. cornstarch with 1 tbsp. vinegar and stir into the skillet. Boil for 1 minute. I'll probably just have green beans with them since I don't have too many points left for the day!

Tonight it's....

Chicken Wraps and FF refried beans.

Grill chicken breasts with Good Ol' George, season and slice.
Put on a FF tortilla with lettuce, tomato, onion, LF cheese and LF Ranch dressing, roll up and eat! About 6-7 points for alot of food!

Tonight I had broiled haddock with a topping of FF Miracle Whip mixed with Parmesan cheese, dijon mustard & a little fresh ground black pepper! Also 1/2 Cup White Rice and green beans! Dessert was Cherry-Angel cake w/FF Cool Whip!

Tonight is spaghetti w/meat sauce. For mine I have 1 cup pasta & fill up my plate with lots of peppers & mushrooms and easy on the sauce. Very filling with all the veggies.

I am having pasta too. Whole wheat pasta with sautéed onion and bell pepper mix in. Then covered in a tomato based sauce (no meat). Top that with parmesan cheese. I love broccoli, so my side dishes are broccoli and light mixed fruit cocktail.
I also will have two slices of Wonder light bread and Brummel and brown spread.

I am doing pizza tonight-I make it with the cheap biscuits (in a tube), and top with tomato sauce, Italian seas., low fat cheeses, and lots of veggies!

I make chicken soup with the no-yolk noodles, chopped onion, peppers, carrots, chicken breasts, and canned chicken broth!

I love all of your great recipe ideas. I am a lifetime WW'er--I achieved this when I was 16 years old. I'm now 45 and just got back to the program. Last week I weighed in at 215.2. Since this is my 1st full week OP, I'm hoping for a nice loss tomorrow at weigh in. Thanks for the great recipe ideas.....

I took 1 1/2 cups of red and green peppers and fried them in water then added taco seasoning on them put them in a big flour wrap with regular cheese(thats all i had and lite sour cream. total pts. 6 You must try them they are wonderful!!!! Also there is one veggie (bonus)

The weigh in is Thursday....so we'll see. Thanks for asking. I saw your beginning and current weight....you must be so proud of yourself! How long has it taken you? Congratulations!
I took my parents to D.C. today, and they wanted to eat at Red Lobster. I had a side salad with vinegar for the dressing and a shrimp cocktail for lunch, so I was very good! (As I watched them eat crab alfredo and a fried crab cake sandwich with french fries.
I just returned home and now am cooking a pizza for my son and his friends after school.....this is killing me! Oh, you know what they say....
"what doesn't kill us, makes us stronger"! I'm going to grill a piece of chicken and make a salad. Okay, that's all for now. Hi to everyone else! Bye, BJ/Travelchick

Travel and Bandit- you both have such willpower-I think I've lost mine! I started WW last Jan. (2003) and it took me a year to lose 61#, but I am in a size 8 and happy here-if I can just stay where I am at. Weight managment will be a lifelong struggle for me...but what is the alternative? Anyway, I got the Mexican craving over with and am back on track toady-I've had two slices of wheat bread with peanut butter for breakfast. I plan on a salad for lunch and I want chicken fajitas for supper, but I will make them low fat by using corn tortillas, low fat cheese, and fat-free refried beans. Tonight I'm having Chicken sausage with zucchini and 1 cup Zatarain dirty rice! Total 5 Points! Yesterday I went to a Chinese Buffet and I'm sure I used up all the rest of my Flex Points!! Good thing my WI is Thursday nite and new points start on Friday!! I lost 5.4# last week! About time! Been on a plateau for 2 months!!

Hi again....

This week I stayed the same! Oh well, better than gaining! As far as PB, I too fall into the clutches of that insidious food!! LOL!! I have a few recipes for whipped Peanut butter that halves the points! That helps a little!
Tonight I'm going to have Denver Brunch Bake, 3/4 Cup Bushes Veg. Baked Beans, Roasted asparagus! I'll have a large salad first, and finish with 1/2 Cup of FF/SF Pudding topped with FF/SF Cool Whip. Total points 9.5

Tonight I am having Creamy Broccoli and Chicken Casserole. It's so good I'll post the recipe:

2 pkg. frozen broccoli spears
1 can RF cream of mushroom soup
1 cup FF mayo
1 cup RF cheddar cheese
1/2 cup egg beaters
1 small chopped onion
1 cup chopped, cooked chicken
1/4 cup RF butter flavored crackers
Cook broccoli until tender, in a large bowl mix all ingred. except crackers. Pour into a sprayed casserole dish. Top with crushed crackers. Bake uncovered at 350 for about 30 min. Serves 9 at 145 cal, 8 g. fat, 3 g. fiber, 12 g. carbs

My plan for tonight is a salad w/FF dressing, Broiled Haddock w/Dijon,Mayo , Cheese topping, 1 Cup Bulgar Pilaf and string beans! For dessert Pineapple -Pistachio Angel food cake w/FF Cool Whip! Total points 11.
I printed out your Broccoli-Chicken recipe. It sounded yummy!!

I have 2 recipes for Whipped Peanut Butter. This one is the one I copied from the Dottie's Site:

Homemade Whipped Peanut Butter

26 OZ jar Good peanut Butter (the kind that is natural)
3 TBSP nonfat dry milk powder
3-4 Tbsp Brown Sugar ( I used Splenda)
1 1/2 Cups Ice Cold Water

Mix in heavy duty mixer (I used a food processer--worked great)--Beat until everything is incorporated and whipped up....

I usually make 1/3 the recipe because it makes a lot.(8 1/2 oz PB, 1 T dry milk, 1 T Splenda and 1/2 Cup water). You should keep it in the refrigerator!

I also just tried today this recipe:

Mock Peanut Butter

1 (15 OZ) can Chick Peas (Garbanzo Beans)
2 or more Tbsp Water
1/2 Cup Reduced Fat Peanut Butter
pinch of salt
1-4 packets of Splenda

Drain and rinse chick peas
Puree chick peas and water in food processor; blend until smooth. Add the remaining ingredients and blend again. (add more water if needed in 1/2 Tbsp increments), to desired consistency. Use as you would Peanut Butter.
This is great as a dip with raw vegetables or apple slice

I think of the 2 recipes I like the first one the best. However, they both can fill the bill! Both recipes work out to 1 point a tablespoon!

Tonight I am having: Southwest Beef Stew
2# lean ground beef cooked with 1 onion, drain fat
Add: 28 oz. can stewed tomatoes
16 oz. pkg. fr. corn
1 can black beans
1 cup salsa
3/4 cup water
Heat through to boiling, add 1/2 cup RF cheese to garnish top. (I add FF sour cream, too)

Serves 6 at 320 cal. each, 7 g. fiber, 7 g. fat (figured without sour cream)

Tonight: chicken sauteed with zucchini, summer squash, mushrooms and chopped tomatoes and sprinkled with a little Italian seasoning. (3 points)

we'll probably go out tonight as we're going to a concert, but last night I made a pork tenderloin and used rosemary, savory, marjoram, salt and pepper as a rub for it. It was soo good. I served it with TJ's chive and spinach pasta w/a scootch bit of parmesan cheese and had a nice big artichoke.

I think I counted dinner as 7 pts.

No idea about tonight, last night I made chicken fajitas. I fried some chicken breast and a little red onion, used a lo-carb herb & garlic tortilla. a small amount of lo-fat cheese and salsa. Had some refried beans with a bit of cheese as a side dish.

Hi all,
My supper tonight is Red Lentil Curry (2), on 1 Cup Brown Rice (3), Broccoli, and for dessert-Cherry Angelfood cake with a dollop of FF Cool Whip (3).

Lentil Curry with Cashews and Yogurt

Serves 6

•1 cup lentils, washed and soaked overnight in 1 cup water (I used red lentils)
•4 cups water
•1 large tomato, chopped
•1 onion, chopped
•2 cloves garlic, minced
•11/2–2 TB curry powder
•1 tsp salt
•1/2 cup chopped cashew nuts
•3/4 cup plain nonfat yogurt
•prepared brown or white basmati rice

Simmer the lentils in 3 cups water, partially covered for 20 minutes. Add the tomatoes, onions, garlic, and curry powder. Simmer for half hour more, covered. Add salt and cook, uncovered for 2 more minutes. Serve over brown or white basmati rice. Top with cashew nuts and a dollop of yogurt.

Notes:


Lentils don't require soaking, but this was the first time I tried this recipe, so I did it as directed. It might cut down on the cook time, I'm not sure.

For the seasonings I used 1tbsp of sweet curry, 1 tbsp of hot curry and 1 tbsp of garam masala (all Penzey's I LOVE their spices)*** I doubled the recipe though, so you certainly wouldn't use that much curry otherwise*** I also used 5 cloves of garlic.

I let it cook down without the lid on the pot till it had the consistency of a nice thick dal, now if you used green lentils I think it would have an entirely different consistency, whereas I used red lentils, which gave it a creamy consistency.

Total points per serving including a cup of rice - 6 points. Delicious, flavorful, so easy to make - I can't rave enough about this one.

This recipe was posted by Nicole on another site! I leave off the cashews and yogurt. The curry alone is 2 points!

roast chicken stuffed with rosemary and garlic
pan roasted baby carrots, green beans, red potatoes and mushrooms

For lunch I'll use some of the leftover chicken to make a roll-up:
1/2 pita, lettuce, 3 oz chicken, 1 tbsp boursin cheese, 1 tbsp cranberry sauce. What a treat!!!!!!!!!!!!!!!

As far as I know, Quinoa is a grain similar to bulgar, etc. I don't know too much about it though!

argh. I ended making pasta ala carbonara last night instead of the healthy stir fry.

2 cups pasta (6-8), 2 eggs (4), three slices bacon (trimmed off lots of the fat) (5-6), 1/4 cup parmesan (4) and pepper.

for two of which I ate 1/3 at most wasn't too bad, but wasn't what I expected.

So, tonight, stir fry or bust. :)

Pork loin (those pre-marinated ones you can get in the meat dept.), mashed squash with butter spray and 1 tsp of brown sugar, and asparagus. 7.5 pts, and I plan on eating 6 oz of the pork loin. Yum!

I am trying to change my family's eating habits a little by getting rid of the pasta and potato sides in favor of a second vegetable. I've been easing them into it slowly, and haven't heard too many complaints so far! Oldest son is getting a little pudgy, but I think my subtle changes plus the basketball season starting will help that out just fine. They can't eat potato chips if I don't buy them ! :devil:
