Default Oh My Gosh - This was so good!

Best dinner last night and lunch today. I'm sure you've all done this before, but since fall is in the air this really hit the spot for me.
I saute'd some large Sea Scallops with some spicy Mrs. Dash. Their natural sweetness with the chili was fabulous. Also Roasted Veggies (Cauliflower, Broccoli, Brussel Sprouts, Rutabaga, and LOTS of sliced Garlic tossed w/olive oil, onion powder, rosemary, thyme, truffle sea salt and pepper) till lightly browned and the garlic was crunchy little slivers of yumm. Made for great dinner.
Best part was lunch today. I pureed 2 cups of the roasted veggies and added to my chicken soup. Made it really thick, so it was kind of like a hearty chicken vegetable stew, So Good, perfect for my cool fall day....I'd love to post a picture, but haven't figured that out yet!

yum!!! except for the scallops....as i am very allergic to scallops!

Oh No - What a bummer - they are so good. My DH is allergic to them too.

sounds wonderful! I love the idea of pureeing the veggies and adding to the soups.
