I've been pretty miserable since Sunday...fever, aches, etc. Do you have any suggestions on comfort foods? I cheated Sunday night, and again last night because there was nothing Atkin's-friendly that had any appeal to me whatsoever! Steak or eggs wasn't what i needed...lol.
I'm past it now, but I'd like suggestions so I'll be prepared the next time it happens...thanks!
The cauliflower soup is a great comfort food because it really tastes so much like potato soup. Also cauliflower can be used to make faux mashed potatoes. And thirdly, make some chicken/ beef vegetable soup. The chicken/beef soups can be slow cooked in a crock pot and you can freeze the leftovers for a time when you just don't feel like cooking but want something comforting. I freeze alot of my soups in ice trays. Then when they are frozen I put the cubes into freezer bags. This lets me use just what I need instead of having to warm up a whole bag. If I just want something to put in a mug or so, a couple of cubes will do. Glad you're feeling better.
Funny...never even thought of soup! I def gotta look up some good soup recipes...esp with the winter sneaking up!
Islandchick, just noticed you're in Fort Worth. I spent 3 weeks there back in 2005. I'm with the Canadian military and we went there to work on a project. I loved it there...enjoyed 6 Flags! Went to Dallas a few times and did the tourist thing...got to visit Southfork Ranch...lol...me and my mom used to watch Dallas every Friday night. Of course, the world's largest Hooters...haha.
I like egg drop soup with chicken, broth, veggies cut small, ginger, salt, pepper, eggs of course, and a little lemon. I've never mastered the egg ribbons, but it's good anyway. I don't measure the things I add, but I do keep it thin and brothy.
Beef and chicken broth poured out of the carton. I add salt, pepper, hot sauce or cayenne, ginger if I want too. Opens the head UP!
Flavored hot teas with a little lemon or splenda or cream. Nice change sometimes.
Also, there's sugar free apple cider mix packets available here - I think Alpine brand. They're pretty good.
And water is low carb, and always helps you heal.
If I'm just TOO sick, especially sinus issues, I'll get some hot and sour take out soup. I'm sure it's not the best choice, but depending on HOW sick I am, there may or may not be cooking involved.
Well, I was going to jump in with soup too, but since that's been covered, you might also consider chai and herbal tea. Nice thing about that and the soup is that it will help you stay hydrated (keep drinking water too!) which is so important when you are sick.
I love all these suggestions! I would also say tea. There are so many really yummy flavors out there to try. My favorite is double vanilla chi, it's like having dessert!

My "comfort food" is something I found on another low carb site. Brown 1 pound of ground beef, add seasonings ( I use garlic powder, onion powder, italian seasoning & chili powder), drain the fat, add 1 (8 oz) block cream cheese and 1 can rotel tomatoes. Stir until heat through. I would describe it as a creamy chili. It is delicious! Very satisfying & comforting.
