Default Refreezing premade garlic bread?

OK, this might not be the smartest question on the go, but I'm honestly not sure about this, so you all are my first line of defense, foodwise!

I purchased a loaf of frozen Villagio premade garlic bread. Now, this is a fair-sized loaf. Like, it's not HUGE, but it's definitely too much for one person (even IF that person isn't trying to lose weight!)

The loaf is, as I said, frozen, and the instructions say not to let it thaw before baking. So my question is: would it be safe for me to bake the whole loaf and then refreeze what I don't eat? I'm really not sure since this isn't something I buy on a regular basis.

Thanks for any advice you can provide. I'm sitting here feeling like a bit of a moron, but I don't want to give myself (or my dad) food poisoning or anything from eating refrozen bread! *L*

I don't think it would be harmful heath wise but I'm not so sure that it would taste the greatest but I have a garbage disposal of a family so I'm not speaking from personal experience.

There's no foodpoisoning issue. Slice up the remaining uneaten loaf into serving sizes and place in small Ziplocs. Thawed bread is sometimes junky, though, because it can get a tad stale, soggy, or freezerburn-y, but after it's defrosted you can stick it in the oven for a bit to warm it.
