Good luck with the processed foods - that one is challenging to a lot of us, I bet!
I saw a nutritionist a few months ago, and it was very helpful. I had just had a full physical so I took all my test results and we discussed how I was heading towards becoming pre-diabetic. She suggested a diabetes-control approach to eating and gave me a lot of literature and suggestions for foods. My main goal is to keep my carbs low and get them primarily from veggies and whole grains - not so much fruit as for me, the natural sugars really spike my blood sugar. I follow Weight Watchers and it's very easy to meld the guidelines from the nutritionist with the WW plan. I'm sure you'll find it really interesting and hopefully get a ton of useful tips to help you reach your goals.
Edited to add - I love your avatar pic. I ride horses, used to event but now I just ride for pleasure - I have a big old daft paint that would just plow through a jump if I put one in front of him!
