Stir fry soup!
I believe I invented this - but probably everyone's done it before!!
I bought a big box of stir-fry veg. in the supermarket, about 300g, I think.
I seasoned it with black pepper, about 6 flakes of dried chili and 1 tsp ground ginger, then stir fried it in 1 tsp vegetable oil for the length of time it took a full kettle to boil.
I dissolved 3 tsp Telma chicken soup mix (who knows why my supermarket should have suddenly been selling kosher soup mix, the only kosher item in the shop, about 3 months ago, it's been a life saver, it makes a clear, bouillony type soup) in 1.5 pt boiling water.
Tossed it into the wok so it bubbled up.
Makes 4 servings at 2.89g carbs, 39 cals, 0.6g fibre.
It is so delicious, just a little kick, and a far greater variety of veggies than I would ever bother chopping for myself. MMMMMMMMmmmmmmm.
