I have a new found love for sauted peppers and onions. They are something that I hated all of my life, until this past winter when I decided to give them a go.. hadn't had them since I was a kid. Yummo! I've been missing out big time chicks! Tonight I had made hamburgers for the family to I decided to saute some up, cut up my burger, dollaped some mustard on each piece and loaded it up with them.... I was in heaven! It was THE BEST BURGER EVER. I know it probably sounds silly to you ladies, but it really was almost like a revalation to me.
It's nice to have cooked peppers and onions on hand, they're easy to add to an omelet or frittata, or to jazz up a tomato sauce. Sometimes I add mushrooms to the pepper and onion saute, too.
For Phase II: I make really yummy quesadillas with whole wheat tortillas and lowfat cheese and lots of the pepper mix. Add salsa and lf sour cream and a dollop of guacamole.
Also really good on top of pizza. I make mine on whole wheat pitas with lots of tomato sauce/paste and a sprinkle of parmesan cheese.
I eat sauteed onions almost daily. One of my favorites. Cooked in a little EVOO with mushrooms, minced garlic, peppers or whatever veggie I have on hand. Last night I had them with zucchini. Tonight with garbanzo beans and pesto.

I like them drizzled with balsamic, olive oil, salt and pepper - then throw in a little feta cheese for a punch! Pair it with sausage and drooooooool....
I stocked up on some more, had some tonight on a burger again. I saved enough to go my scrambled eggs tomorrow... i'll probably dice up my canadian bacon in them too. mmmmm can't wait
Oops, If you like that in your eggs, you'll probably like cabbage in it, too. I cut the cabbage in shreds like coleslaw, saute it with some onion, and a little Cajun seasoning, then scramble in the eggs. If you use your imagination, it's a little like hash browns.
